Well, there’s a first time for everything…. and last night I had two. One involved cauliflower mac & cheese that I screwed up by not adding milk…. major sad face! On the other hand, I had a major win last night in adding some flax-seed to a batch of cookies…. Yummy!
I started with a very tasty recipe I pilfered off of Tastespotting.
CAKE BATTER COOKIES
- 1, 18.25 oz boxed cake mix
- 1 tsp baking powder
- 2 eggs
- 1/2 cup vegetable oil
- 1 cup chocolate chips
Mix dry. Mix wet. Combine, and stir in chips.
Bake at 350 degrees for 10 min. Cool on pan for five before removing.
For my flax addition, I decided to sub 1 Tablespoon milled flaxseed plus 3 Tablespoons water for one of the eggs. I added the flax to the dry, and the water to the wet. Results were tasty. I’m not sure that I save much of anything, and figured it was a fairly low risk….. but I have less vegetable oil in my house than I used to, and I’m glad for that… getting closer to being rid of it entirely!
In other news…. yesterday marked ten wonderful marital months for Matt & me! I’m starting to feel like we’re learning how to do the marriage thing better than when we started! With that: I may or may not blog again til Monday, so have a great weekend!
