I am beyond belief excited to share with you guys this recipe for apple crowns. I have been sitting on it for awhile…. because I had to make it twice to get it just right! Well, last night I made it for the second time and I can tell you for sure that it is fool-proof! A delicious cross between apple pie and apple muffins…. yumtacular!
Excuse me: I had to eat one just now…. oh it could be dangerous that I was left alone with them!!!
Now to the down and dirty……
You need to have some nice tart apples. I used 5 of them last night…. you can do this with anywhere from 1 1/3 cups of apples to about 4 cups. I had somewhere between 3 1/2 to 4 cups yesterday. You chop them up real fine. Then, add a handful of chopped nuts. You could use pecans, like me, or walnuts….. which is what my grandma would have done. did I mention my grandma gave me this recipe?
then, you add to that some sugar, cinnamon, flour, a dash of salt…. and if you’re feeling up to it: a pinch of nutmeg. I did the first time…. and the second I totally forgot, so there you go. It”s not lacking without, but that little spice goes a long way 🙂
Anywho, then you mix this filling up, and nuke it for about 2-3 minutes until soft and filling like. If you’re living sans microwave, I’d probably just saute. I’d start with nonstick spray, and the apples and nuts alone….. then add the remainder when the apples are looking crisp tender, and make sure you cook off the flour for at least one minute!
OH! I forgot to mention these are photos from the first stab at the batch….. and I used way less filling the first time. So, use the photos as a reference. Don’t freak out if you feel like you have too much apple goodness: You can NEVER have too much apple goodness!!!!!!!!
then, you roll out on of those Grands Flaky biscuits until it’s five inches in diameter. You scoop a heaping teaspoon of cinnamon sugar in the center, and then a heaping quarter cup of apple goodness. Bring the sides together, seal it up, and put it seam side down in a muffin cup. Now, it said to use and ungreased….. but i just couldn’t go there.
Then, you simply brush with melted butter, and sprinkle with cinnamon sugar & cut a criss-cross in the top of each one. HINT: I use dried beans in the spare spots to protect my pan…. you can use water, though it might affect your baking climate….. or you could make a triple batch, and have two pans full….. though, I don’t even HAVE two muffin pans 😦
Bake 18-22 minutes at 350…. until golden brown and delicious looking! Cool for five in the pan, and take them out….. Oh boy, you will NOT be disappointed!!!!
APPLE CROWNS
3 1/2-4 cups of chopped tart apples
1/2 cup chopped nuts
1 cup sugar, divided
4 T flour
4 t cinnamon, divided
dash salt
pinch nutmeg
1 package large flaky biscuits
2 t melted butter
In a microwave safe bowl, combine apples, nuts, flour, 6 T sugar, 1 1/2 t cinnamon, salt, nutmeg. Microwave 2-3 minutes until just tender.
Flatten each biscuit into a 5 inch circle. Combine remaining cinnamon and sugar and pour a heaping teaspoon onto the center of each biscuit. Top with a generous 1/4 cup of apple mixture Bring up edges, and pinch to seal.
Place seam side down in ungreased muffin cups. Brush with butter and sprinkle with cinnamon sugar. cut a cris-cross in the top
Bake for 18-22 at 350 until golden brown! Coll in pan for fine minutes, then remove. And, eat when you can’t stand it anymore…. oh so good!
