Let me start this by saying I was skeptical. In fact, I think I still might be. However, these were delicious!! Not the first night. They need to rest a day. And, then: yumminess!
Zucchini Brownies:
1/2 cup vegetable oil
1 1/2 cup white sugar
2 t vanilla
2 cups flour
1/2 cup unsweetened cocoa
1 1/2 t baking soda
1 t salt
2 cups shredded zucchini: peel it and get it as fine as you can!
1/2 cup chopped nuts, I used pecans
Preheat oven to 350 and grease a 9×13 pan.
Mix sugar, oil, vanilla until well blended. Combine flour cocoa, soda and salt; stir into sugar mixture. Fold in zucc and nuts. Spread into pan.
Bake 25-30 minutes or until they spring back when touched.
Frost with something delicious like a creamy fudgy frosting you get from the store, cause it’s easier.
HINT: the batter will be shockingly dry until you add the zucc! These are fudgy brownies, not cake ones, so even with the zucc it’s gonna be a thick one!
