Today: apple zucchini muffins!!!! Did I mention these were fabulous? I made a little bit of a recipe up given the fact that I had some extra apples hanging out from my Grandma Jo…. more on grandma’s apples at a later time.
Apple Zucchini Muffins
2 cups flour
1 1/2 cups sugar
2 t baking soda
2 t ground cinnamon
1 t salt
2 eggs lightly beaten
1 cup vegetable oil
a pinch of nutmeg
1/2 cup mil
2 T lamon juice
2 t vanilla
2 cups shredded zucchini
2 tart apples, diced finely
Once again, this is really simple! Mix flour, sugar, baking soda, cinnamon, salt and nutmeg. Then combine egg, oil, milk, lemon juice, vanilla and mix well. Stir wet into dry. Then, add zucchini and apples.
Fill greased muffin tins 2/3 full of mix, and bake at 350 for 20-25 minutes.
The thing I liked about these besides the overall tastiness of them was that I felt like they were easy to bake, and was glad they didn’t take an hour in the oven. I greatly enjoyed the apple.
